Moose Meatball Lettuce Wraps

Moose Meatball Lettuce Wraps

Lettuce wraps make a delicious and easy appetizer or even a light dinner!

Ingredients In Moose Meatball Lettuce Wraps

Meatballs

  • 1 Pound Moose or Elk ground – I used lean moose for this recipe so there’s no need to get rid of the grease. These meatballs would also be great with ground chicken or turkey.
  • 1 Yellow Onion – Chopped up finely.
  • 1 tablespoon Fish sauce (You can substitute soy sauce for fish sauce if you like.)
  • 1 tablespoon Red Curry Paste
  • 1 cup Bread crumbs – Any kind is fine, this alongside the eggs will act as a binder for our meatballs.
  • 1 Egg – This is the binder for our moose meatballs.
  • Seasoning – Salt and pepper to taste.
  • Oil – Canola oil or butter for frying later.

Peanut sauce

  • ½ cupPeanut butter – I used chunky but if smooth is what you have on hand feel free!
  • 2 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon Lemon or Lime Juice
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Red pepper flakes
  • 2 tablespoons Sugar
  • 1/4 cup Olive or Canola oil and bottled water get our sauce to the desired consistency.

How To Make Moose Meatball Lettuce Wraps

Making Meatballs

In a large bowl add all the meatball ingredients (minus the oil) and mix well using your clean hands. Shape the meat mixture into smaller size meatballs. You should get around 25-30 meatballs.

In a large skillet heat the oil or butter over medium heat. Add the meatballs and fry until golden brown all around, should take about 7 minutes. Transfer the meatballs to a plate and set aside.

Peanut Sauce

Place all the peanut sauce ingredients in a blender and pulse until well blended. Add more water if needed for your desired consistency.

Lettuce Wraps

To assemble the lettuce wraps, place 3 meatballs on a leaf of romaine. Top with peanut sauce. Garnish with green onion or some shelled peanuts. Save some of the sauce for dipping!
